Number of Servings: 23


    3.5 cups flour
    2 tsps baking powder
    1 tsp allspice
    1 tsp cinnamon
    1 tsp nutmeg
    0.5 tsp cloves
    0.5 tsp salt
    0.5 tsp baking soda
    1.3 cups brown sugar
    0.75 cup fat free milk
    0.33 cup sunflower oil
    2 tsps vanilla extract
    2 large eggs
    450g pumpkin (canned)


1. Preheat oven to 350.
2. Line muffin tin with paper muffin cups and set aside.
3. Combine all dry ingredients in a large bowl and whisk well. Make a well in the center.
4. Combine all wet ingredients in a small bowl and whisk well. Pour into well of dry ingredients and stir till just combined.
5. Spoon into muffin tin. Should make 23 muffins. Bake for 18-20 minutes.
6. Cool muffins on a wire rack. One serving = one muffin. Makes 23 muffins.
