Introduction

Traditionally bakers add sugar and salt to their bread dough, as in this recipe. If you wish to omit the salt and sugar, your bread may rise a little less. Ingredients

    500 gram(s) Strong wholemeal Bread Flour (Doves Farm Organic)
    1.5 tsp Salt
    1 tsp Quick Yeast (Doves Farm)
    1 tsp Granulated Sugar
    350 mL Water
    1 tbsp Rapeseed Oil
    1 tbsp White Wine Vinegar

Directions

In a large bowl mix together the flour, salt, quick yeast and sugar.
Stir the water into the flour and while it is still craggy, add the oil.
Knead well until the dough is smooth and pliable.
Leave the dough in a bowl covered with clingfilm or a shower cap, in a warm place, to double in size (about 1 to 2 hours).
Turn the dough out onto a floured surface and knead the dough firmly for a few minutes.
Shape the dough and put it into a 1kg/2lb oiled bread tin or place it on an oiled baking sheet.
Cover and leave dough to rise for 35/40 minutes.
Bake in a pre-heated oven for 40/45 minutes.
