Ingredients

    32.0 oz Kabocha Squash (buttercup, japanese pumpkin)
    2.0 tbsp Smart Balance Light Buttery Spread with Flax Oil
    6.0 tsp Dark Brown Sugar, Pure Cane Sugar
    0.25 tsp Cinnamon, ground
    0.25 tsp Salt

Directions

Cut into quarters, remove seeds, bake at 350 for 45 to 50 mins/ until tender on thin baking sheet. Spray 1 quart casserole dish with cooking spray, scoop squash pulp from skin. In medium bowl add ingredients. Mix well, add to casserole dish. Bake 20 to 25 mins.
