Ingredients

    Tilapia filets
    coconut milk
    scallion, diced
    sesame seeds, toasted
    sugar snap peas, rinsed and trimmed
    Ginger root, grated
    curry powder (or curry paste... for more flavor but more calories)
    Soy sauce

Directions

Cook Rice according to package directions, or for more flavor, cook in half water/half broth. Rinse Tilapia and pat dry lightly. Mix Curry Powder and sesame seeds together on a plate. With a basting brush, brush the filets with coconut milk and then dredge Tilapia in curry/sesame mixture. Place filets on a baking sheet and Broil for 3-4 minutes on each side. Add scallions and ginger to a pan with 1/2 cup coconut milk. Stir in rice until liquid is absorbed. Add Sesame oil to a frying pan and turn heat to medium. Lightly fry peas. Serve Tilapia over rice with peas as a side.
