Ingredients

    1 onion, chopped
    2 16 oz can black beans, rinsed and drained
    2 16 oz cand kidney beans, rinsed and drained
    2 cups frozen corn
    16 oz tomato sauce
    2 28 oz cans diced tomatoes
    1 1.25 oz packets less sodium taco seasoning mix
    4 boneless chicken breasts

Directions

-Mix all ingredients in slow cooker (leave chicken out.
-Place chicken on top of stew and cover.
-Slow cook for 6 - 8 hours on low (3-4 hours on high)
-Remove chicken, shred, return to stew and mix in.
-Cook additional 30 minutes.

Can serve with various toppings (not included in calorie count) such as sour cream, cheese, tortillas, scallions, etc.
