Ingredients

    Red Ripe Tomatoes, 1.5 cup, chopped
    Asparagus, fresh, 1.5 cup, chopped in 1-2" pieces
    Ground beef, lean, 16 oz
    Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.), chopped
    Pepper, black, 1 dash
    Onions, raw, .5 large

    Garlic Sauce:
    Milk, 1%, 2 cup
    Butter, salted, 2 tbsp
    *Flour, white, 2.5 Tbsp
    Pepper, black, 1 dash
    Garlic, 3 cloves

Directions

Preheat oven to 400.

In a large baking dish, add asparagus, potatoes, tomatoes and pepper.
In a pan, cook beef and onion. Drain fat if needed.
Add meat mix to baking dish.

In a seperate saucepan, melt the butter, add the garlic (minced) and let cook for 30 seconds. Then add flour and pepper and stir. Add in milk and continue stirring. Let cook til to a boil and then take of heat. Let cool for a minute, then add to baking dish.
Mix baking dish to distribute garlic sauce (lightly) and put in oven. Cook for approx 20-30 minutes- until potatoes are done.

Makes 6 large servings.
