Ingredients

    4 serving Earthly Choice Lentil Trio Uncooked .25 C (by DGULLETTE)
    1 cup, chopped Onions, raw
    1 tsp Garlic
    1 oz Ginger, Crystallized
    1 fruit without refuse Mangos
    0.5 tsp Turmeric, ground
    0.5 tsp Coriander leaf, dried
    0.5 tsp Cumin seed
    0.25 tsp Pepper, red or cayenne
    3 tbsp Parsley, dried

Directions

Rinse lentils, then add to a saucepan with 2 cups of water. Add turmeric and bring to a boil. Reduce heat to simmer and cook 15 minutes, stirring frequently. Meanwhile, sauté onion, garlic, and other spices (except parsley) in a small amount of water or vegetable broth until onions are soft. Stir onion mix into lentils. Chop mango and add it to lentils. Cook 10 more minutes, then stir in parsley and serve.
