Introduction

Although this recipe came to me with a mayo/buttermilk dressing attached, I found that I liked it much better dressed with just some vinegar. This is best with a mixture of several different kinds of beets if you can get them, but will delicious even if you just stick with the traditional dark red ones. Ingredients

    1 1/2 cups shredded cabbage
    1 1/2 cups shredded dark leafy greens
    1 cup shredded beets
    1/4 cup sliced green onions
    2 Tbsp chopped fresh parsley
    1/4 cup vinegar of your choice, or to taste
    salt and pepper to taste

Directions

Combine all ingredients except vinegar and salt and pepper in a large bowl. Add vinegar, salt and pepper just before serving and stir well to make sure the vinegar gets all the way through the veggies.
