Introduction

A fun twist on the regular old salad. A fun twist on the regular old salad.
Number of Servings: 10

Ingredients

    Salad:
    1 head Romaine Lettuce chopped
    1 head Iceberg Lettuce chopped
    1 can corn
    1 can black beans
    1/2 can black olives sliced
    1 avocado in chunks
    1/2 onion diced
    1 large red tomato

    Chicken:
    2 chicken breasts
    2 T lime juice
    pinch of Adobo or other seasonings

    Tortilla Strips:
    corn tortillas
    oil for frying

    Dressing:
    1 cup Ranch Dressing
    1 Avocado
    2 t lime juice
    a few sprigs of cilantro

Directions

Marinate the chicken in the lime juice and spices and then grill. Cut into bite size strips

Blend ranch dressing, avocado, lime juice and cilantro in blender.

Heat oil for frying. Cut corn tortillas into strips and fry until crunchy. Sprinkle with salt if desired.

Prep salad and toss together all of the ingredients. Top with tortilla strips. (Dressing on the side).
