Ingredients

    1 lb Baby Lima Beans, Dry
    1tbsp Olive Oil
    1 cup, chopped Onions, raw
    1 cup, chopped Carrots, raw
    1 cup, diced Celery, raw
    2-3 garlic cloves minced
    1/2 cup (42 grams) Harmony House ~ Dehydrated Vegetable Soup Mix
    1-2 tsp Italian seasoning if desired

Directions

soak dry beans overnight in plenty of water (maybe twice their volume) drain and rinse. saute onions, carrots, and celery in olive or vegetable oil until onions begin to get translucent. Add garlic and briefly sautee taking care not to burn. Add beans, soup mix, seasoning and 6 or more cups water (or unsalted stock of your choice.) Bring to low boil, reduce heat and simmer until beans are done to your liking.
