Ingredients

8 oz of pasta (I like thin spaghetti or angel hair)
1 8 oz tub of low fat cream cheese
1 cup chicken broth
1/2 cup grated parmesan cheese
3 cloves of garlic
1 cup shrimp, w/out heads, shells, and tails
2 cups fresh chopped spinach
1 can italian style diced tomatoes
1 cup fresh or frozen broccoli
Directions
-Cook pasta according to package directions.
-In a large skillet with high sides, cook chicken broth and cream cheese over medium-high heat until cheese is completely melted (about 3-4 minutes)
-Add parmesan and garlic.
-Add shrimp, spinach, tomatoes, and broccoli. Stir until shrimp is cooked and broccoli is crisp tender.
-Turn off heat and stir in pasta.
Makes 6 servings
