Breakfast Casserole w/ sausage, tater tots, cheese, eggs. Can be prepared the night before and cooked in the morning. Can easily be cut up and frozen after it's been cooked. Ingredients

16 oz Jimmy Dean All Natural Pork Sausage
1 cup Almond Breeze Almond Coconut Milk Blend Unsweetened
10 large Eggs
30 pieces tater tots (Market Pantry Potato Puffs (about 10 pieces))
6 oz Cheese - Kroger Mild Cheddar Cheese
ground mustard to taste
black pepper to taste
Directions
This will be pretty salty on its own. You don't need to add salt.
Preheat oven to 350F
1. grease 9.5 x 13 pan lightly with cooking oil
2. bake tater tots in the pan at 350F for about 10-15 min or until soft. While tots are cooking;
3. cook the sausage in a pan on the stovetop over medium-highish until fully mixed and browned. Drain and set aside.
4. In a large bowl, mix the eggs with the milk or milk substitute, add in half of the cheese and spices, stir.
5. After tots are soft, turn up oven heat to 400F. smash them up into one layer (or leave them, your preference).
6. Pour the sausage evenly over the tater tot layer
7. Pour the egg mixture into the pan
8. sprinkle the remaining cheese over the top of the eggs.
9. Cook in oven at 400F for 20-25 minutes.
