Ingredients

2 c whole wheat flour
1 1/2 c all purpose flour
1 c granulated sugar
4 tsp baking powder
1 tssp baking soda
1 tbsp cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1 1/2 c raisins
1 (14oz) can of pumpkin puree (not pie filling)
1/2 c vegetable type oil
2 c buttermilk
3 eggs
Directions
Preheat oven to 375F
Combine whole flour, all purpose flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger and raisins.
In separate bowl, blend together pumpkin, oil, buttermilk and eggs
Mix in a large well in center of dry ingredients; pour in wet ingredients all at once. Gently fold together until just combined. Spoon batter into muffin tins. Bake in preheated over for 18 - 22 min or until firm to touch
