Ingredients

    102 grams Granulated Sugar
    140 grams Lemon Juice
    10 grams Corn Starch
    5 grams Lemon Peel
    14 grams Margarine, hard
    0.15 tsp yellow food coloring (by UCANBHOLD)

Tips

- Makes 280 grams
- Can substitute tapioca flour or arrowroot for some of the corn starch for better flavor, but texture will be more slippery.
- Add 3 drops yellow food coloring (at beginning) if desired.
- Store tightly covered in the refrigerator.


Directions

Stir together sugar, juice, starch, and peel in small saucepan.
Heat while stirring constantly.
Once it starts to thicken, cook 1 minute longer.
Remove from heat.
Stir in margarine.

Cool completely before serving.
