Introduction

Ingredients

    12 fingerling potatoes (or 4 medium potatoes)
    1 tablespoon olive oil
    1 teaspoon crushed garlic
    1 tablespoon finely chopped fresh rosemary
    1 teaspoon cracked black pepper
    1/2 teaspoon salt

Directions

Preheat oven to 450. Cut potatoes in half lengthwise, then cut into 1/4-inch-thick strips. Place potato strips in a bowl and add olive oil and garlic, mix until strips are thoroughly coated. Mix together rosemary, pepper and salt. Sprinkle over potatoes and mix until spices are well distributed. Lightly spray a baking sheet with cooking spray and spread potato strips in a single layer on it. Bake for 25-30 minutes (start checking the potatoes at about 20 minutes as you don't want them to burn). The potatoes should be nicely browned and slightly dried out. They turn out crispy on the outside and nicely chewy on the inside -- soooo much better than French fries. Makes four servings.
