Ingredients

* 1-cup self-rising flour
* 1-cup Panko bread crumbs or regular bread crumbs
* 1-tablespoon of old bay seasoning or seasoned salt or your choice
* 1/4-teaspoon cayenne pepper (optional)
* 1-cup of nonfat milk
* 1-lb of green tomatoes, sliced as thick or thin as you like...the thinner they are the crispier they get
* Parkay Spray - about 20 or so sprays
Directions
(1) Preheat your oven to 425-degrees.
(2) In a medium bowl put the milk .
(3) Mix together the flour and old bay or season salt (whichever you are using) well in one bowl. Put the panko in another bowl.
(4) Slice the tomatoes into slices.
(5) Dip the tomato slices into the milk, then the flour mixture, then back into the rmilk (let excess drip off) and finally into the panko.
(6) Place each slice on a baking sheet that has been sprayed with cooking spray and then spray the tops of the tomatoes real quick.
(7) Bake until nice and crispy, about 25-minutes, flipping after 15-minutes.
(8) Serve immediately!
