Introduction

This is a very cheap, super low fat, spicey Mexican dish that's slow cooked in a crock pot. Quick to make, and very tasty! This is a very cheap, super low fat, spicey Mexican dish that's slow cooked in a crock pot. Quick to make, and very tasty!

Ingredients

1 26 oz jar of Hot Salsa
1 Cup of Uncle Bens Whole Grain Brown Rice
2 Cans of Campbell's 98% Fat Free Cream of Chicken Soup
1 Packet of Lawry's Taco Seasoning
    6 Chicken Breasts

Directions

I just throw everything in a crock pot. Let it cook over night, or during the day. How simple is that! 4 hours on high, 8 hours on low. Once it's done the chicken should just fall apart....so good.

by "Uncle Ben" do you mean minute rice ? I put in a cup of brown rice and cooked it all day and it STILL wasn't cooked. The chicken was delicious though. - 7/8/08

No, I used Uncle Bens brown rice. I had it cooking all night though, for about 10 hours. I'm sorry the rice option didn't work for you. :(
