Introduction

I got some tips from other Spark posters on how to microwave eggs. Now I have a healthy & delicious breakfast to replace the Egg McMuffins I used to have for breakfast. I usually have this with fresh fruit or yogurt. I got some tips from other Spark posters on how to microwave eggs. Now I have a healthy & delicious breakfast to replace the Egg McMuffins I used to have for breakfast. I usually have this with fresh fruit or yogurt.

Ingredients

    1 large egg
    1 slice canadian bacon
    1 english muffin (I use Thomas's Hearty Grain)
    1 - 2 tbsp feta cheese
    cooking spray

Directions

Spray a microwave safe coffee mug with cooking spray (I use butter flavored). Crack an egg into the mug & pierce the yolk with a fork. Cover w/plastic wrap & poke holes in the wrap. Microwave for about 1 min until egg is done the way you like it (I usually check it about every 20 seconds).

Layer 1 slice of canadian bacon, egg, & feta cheese on an english muffin. Before closing, put in the toaster oven on broil until cheese is warm (feta doesn't usually melt). Close to make a sandwich and enjoy.

    Incredible!
    I wanted to know how to microwave an egg and this works perfectly! The saran wrap on top of the mug is a great idea. No mess and the egg was cooked to perfection. Thanks for sharing! - 6/17/11
