Introduction

Number of Servings: 12

Ingredients

    4 cups milk
    2 cups water
    1 cup white rice (any will do, but basmati is the most authentic)

    1 can condensed milk (1 1/8 cup)
    2 tbsp chopped pistachios
    1/4 cup rose or lavender sugar (or plain if you haven't got the florals)
    seeds of 4 cardamom pods

Directions

Put the milk, water and rice into a pot. Cook over medium for about 30 minutes until the rice is soft. If the grains are rather large or the pudding isn't thickening, you can use a hand blender to break down the rice a little more-- but don't entirely puree it.


Add the condensed milk, sugar, pistachios and cardamom seeds. Serve warm or cold (I prefer cold).


Makes about 6 1/2 cups pudding, or enough to feed about 12 people a healthy serving.
