Ingredients

    2 lb fresh tomato
    2T dried parsley
    1 large or 2 medium leeks
    2T (heaping) minced garlic
    1T olive oil
    1 cup tomato sauce
    2T red wine
    1 tsp dried dill
    1.5 tsp paprika
    .25 tsp thyme
    .5 tsp salt
    .25 tsp black pepper

Tips

Salt and pepper should be done to taste; quantities given are merely recommendations.


Directions

Puree 1.5 lb of tomato with the parsley.

Dice the remaining .5 lb tomato.

Chop the white and pale green parts of the leek into rings .25" wide. Make sure to rinse thoroughly.

Bring leek rings, minced garlic, olive oil and 4 cups of water to a boil in a large soup pot.

Once boiling, reduce heat to Low. Simmer for 5 minutes.

Add remaining ingredients (including all tomato) and simmer for 25-30 more minutes.

If serving hot, let stand for 30 minutes and then heat before serving.
