A lovely light, low fat salad for summer A lovely light, low fat salad for summer
Number of Servings: 2

Ingredients

    1 small tin of Sweetcorn (195 gram)
    2 large Carrots, grated or spiralized
    1 medium red Pepper, chopped
    4 Sun Dried Tomatoes, chopped
    1 small Onion, chopped
    1/2 Avocado, sliced
    Juice of 1 lime
    Juice of 1/2 a lemon
    1 tbsp Coriander leaf, dried or 1/4 cup chopped fresh coriander

Directions

Combine all the vegetables in a bowl
Add the herbs
Squeeze the lemon and lime juice over the salad
Gently stir and serve
