Introduction

A yummy way to get one of your five aday, although you would have to eat the whole cake!!, A yummy moist cake made with homemade smoothie. A yummy way to get one of your five aday, although you would have to eat the whole cake!!, A yummy moist cake made with homemade smoothie.
Number of Servings: 10

Ingredients

    For the cake:-
    Half a Banana
    Handful of strawberries
    A plain low fat yogurt
    1 cup flour
    0.5 cup sugar
    3 tablespoons margarine
    1 egg

    Icing:-
    3 tablespoons sour cream
    20g icing sugar
    1 tablespoon water

Directions

Blend, in a blender, the banana, strawberries and yogurt together. (note: I made extra here so i could drink a smoothie as i cooked and you can use any fruit you fancy).
Mix the egg, flour, sugar and margarine. Add the smoothie. (note: add the smoothie slowly)
Mix completely and pop in the oven at 220C for 30mins. done when you can stick a knife in it and it comes out clean.
As for the icing mix the icing sugar and water in to a paste, then add sour cream to taste.
I personnally think the sour cream icing is lovely but also works without.
