Ingredients

    5 pkgs (8oz) low fat cream cheese
    3/4 cup granulated Sugar
    3 Tbsp THM Super Sweet
    3 Tbsp - all purpose flour
    1/2 Tbsp dried lemon peel
    1/4 tsp salt
    5 large eggs, fresh
    2 large egg yolks
    1/4 cup liquid whipping cream
    1 cup all purpose flour
    2 tsp THM Super Sweet
    1/2 cup butter, unsalted
    1 large egg Yolk

Tips

Yummy! Lightened version of the traditional NY style cheesecake. No whipped cream topping. Top with fruit of choice.


Directions

Crust: 1 cup all purpose flour
1/2 cup butter, softened
2 tsp THM Super Sweet blend
1 large egg yolk
Mix above ingredients until crumbly. Pat into greased springform pan. Bake at 400 degrees for 8-10 min.

For the cheesecake:
Mix cream cheese, sugar, THM Super sweet, flour, lemon peel, and salt. Add eggs, egg yolks, and whipping cream. Beat on low until blended. Pour over baked crust. Bake at 475 degrees for 15 min. Bake an additional 1 hour at 200 degrees. Chill for at least 3 hours. May top with fruit.
