Introduction
I always thought this potato salad was too simple...until a family cookout when my family couldn't stop raving about it! It's very simple and easy! I use red potatoes because they're small, so I don't have to peel them or spend too much time cutting them! Ingredients

1 lb red potatoes, quartered
2 hard boiled eggs, chopped
1 cup chopped sweet onion
1/2 cup light mayo
2 tsp yellow mustard
1 tsp cidar vinegar
1/4 tsp white pepper
Directions
Cook the red potatoes in boiling water about 10-12 minutes, until they can be pierced by a fork.
Drain the potatoes and cool.
Add the egg and onion.
In a separate bowl, combine the mayo, mustard, vinegar, and pepper. Add this mixture to the potatoes, onions, and egg. Combine gently (you don't want to mash up your potatoes!). Cover and refrigerate. It can be served immediately. It's delicious warm or cold!
