Ingredients

    * 2 cups leftover white rice from fridge
    * 2 packets boca burger crumbles
    * 2 large eggs
    * soy sauce - 2 tbsp
    * olive oil - 2 tbsp
    * sesame oil - 1 tbsp
    * frozen mixed veggies
    * spicy szechuan sauce - 1 tbsp

Directions

Warm 2 tbsp olive oil in pan on medium-high heat. Add rice and cook until separated. Put boca crumble packets in microwave for two minutes. Reduce heat on rice to medium and add boca crumbles and frozen veggies. Add sesame oil if necessary when pan gets dry. Add soy sauce and szechuan sauce. Cooked until heated through. Beat two eggs in a cup/bowl and separate middle of rice mixture so you can pour the eggs onto the pan in the middle of the rice. Stir around to beat a bit and then mix in with the rice, etc. Continue stirring until egg is fully cooked.
