Introduction

These make a great, healthy snack, also known as energy balls or no-bake energy bites. You can substitute almost anything for any of the ingredients to work around food allergies, special diets, etc. Soy butter, almond butter, cashew butter, sun butter, etc. all works in place of peanut butter. You can use creamed or liquid honey. In place of the honey you can use agave nectar or maltitol syrup. If you do not like or can't eat coconut try wheat germ, granola, any type of crushed cereal, cocoa powder or whatever you like. The chocolate chips can be regular or carob or you can use raisins, cranberries, goji berries or crushed nuts. The possibilities are endless. Ingredients

    1 cup dry Oatmeal (can use gluten free)
    1/2 cup Peanut Butter - Peter Pan 100% Natural Creamy
    1/3 cup Honey
    1 cup, shredded Coconut, raw (optional)
    1/2 cup *Flax Seed Meal (ground flax)
    1/2 cup Nestle Semi Sweet Chocolate Chip Morsels
    1 tsp Vanilla Extract

Tips

You can substitute dairy free chocolate chips or M&M's, if desired. You can use any nut butter (if too thick to stir, try microwaving for 10-15 seconds).


Directions

Mix all ingredients together in a large bowl with a wooden spoon or spatula. Cover and refrigerate 30 minutes. Form into balls. Store in covered container in refrigerator.

Serving Size: Makes 20 balls
