Ingredients

•6 oz chorizo sausage
•8 (6-in) corn tortillas
•6 eggs
•¼ c milk
•½ tsp pepper
•½ tsp salt
•1 c Monterey Jack cheese, shredded
•1 dash hot pepper sauce
•½ c salsa
Directions
1. Crumble sausage into skillet and cook over medium-high heat until evenly browned. Set aside.
2. Warm tortillas in a skillet over high heat for about 45 seconds per side. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray a skillet, over medium heat, with cooking spray and pour in the eggs mixture. Cook until firm.
3. Sprinkle cheese into tortilla and scoop in eggs, sausage and add hot sauce and salsa as desired.
