Ingredients

    • 3 (15-ounce) cans no-salt-added black beans, undrained
    • 2 (13 3/4-ounce) cans low-sodium beef broth
    • 2 cups water
    • ¾ cup chopped green pepper
    • 2 tsp minced garlic
    • 1 (14 ½-ounce) can no-salt-added whole tomatoes, undrained and chopped
    • 1 (4 ½-ounce) can chopped green chiles, undrained
    • ¼ lb extra-lean cooked ham, diced
    • ½ cup red wine vinegar
    • 1 tsp dried oregano
    • 1 tsp dried thyme
    • 1 tsp ground cumin
    • ½ tsp coarsely ground pepper

Directions

1. Combine first 6 ingredients in a large Dutch oven; bring mixture to a boil. Cover, reduce heat and simmer 20 minutes, stirring frequently.
2. Add tomato and remaining ingredients to bean mixture. Cook, uncovered, over low heat 30 additional minutes, stirring occasionally.
