    1 serving quinoa great value white .25 cup dry (by LAURIE545)
    2 cup Swanson Vegetable Broth (by MAYABUTTA)
    1 serving Taco Bell - Taco Seasoning Mix (1 packet) (by STEVI77)
    33 grams Tomato Paste

Tips

You can adjust the amount of taco seasoning used or mix your own taco seasoning for this recipe to cut down on the amount of salt. Also, you could buy low sodium black beans to cut the amount of salt.


Directions

Rinse 1 cup of white quinoa until water runs clear. Mix 2 cups of vegetable broth with 1/2 of a packet of taco seasoning and 1 tablespoon of tomato paste. Add quinoa to vegetable broth mixture and cook for approx. 20 minutes.

Rinse black beans thoroughly to get rid of excess salt. Mix black beans with 1/2 packet of taco seasoning and 1 tablespoon of tomato paste.

When quinoa is cooked, add black bean mixture to quinoa and stir. Cook for another five minutes until beans are heated thoroughly. Makes approx. nine 0.5 cup servings.
