Number of Servings: 8

Ingredients

    * 1/2 cup malt vinegar
    * 1/4 cup plain yogurt
    * 1 tablespoon vegetable oil
    * salt and pepper to taste
    * 1 teaspoon mixed spice (middle eastern spices)
    * 1/4 teaspoon freshly ground cardamom

    * 8 skinless, boneless chicken thighs

    *
    * 1/2 cup tahini
    * 1/4 cup plain yogurt
    * 1/2 teaspoon minced garlic
    * 2 tablespoons lemon juice
    * 1 tablespoon olive oil
    * 1 tablespoon chopped fresh parsley
    * salt and pepper to taste
    *

    * 4 medium tomatoes, thinly sliced
    * 1/2 cup sliced onion
    * 4 cups shredded lettuce
    sweet pickles or banana peppers, sliced thin

    * 8 pita bread rounds

Directions

* 1/2 cup malt vinegar
* 1/4 cup plain yogurt
* 1 tablespoon vegetable oil
* salt and pepper to taste

* 1/4 teaspoon freshly ground cardamom

Mix all above into a marinade, and add:

* 8 skinless, boneless chicken thighs
sliced very thin, preferably shredded. If you keep the chicken partially frozen, and run it through the slicer on your food processor, this works perfectly. Bake/roast the chicken in your oven at 400 degrees, stirring frequently to make sure all gets cooked evenly, about 1/2 hour or until done.

Mix together the following ingredients into a sauce:
*
* 1/2 cup tahini
* 1/4 cup plain yogurt
* 1/2 teaspoon minced garlic
* 2 tablespoons lemon juice
* 1 tablespoon olive oil
* 1 tablespoon chopped fresh parsley
* salt and pepper to taste
*

Pour sauce over cooked chicken, and place a scoop into a pita round, with the follow ingredients:
* 4 medium tomatoes, thinly sliced
* 1/2 cup sliced onion
* 4 cups shredded lettuce
sweet pickles or banana peppers, sliced thin
