Introduction

Consider using Low Sodium Soy Sauce to reduce sodium content.

Use more water and/or corn starch if you like more gravy or a thicker sauce.

Try other asian vegetables according to taste or for variety.

I mince carrots and celery in a Handy Chopper, as smaller pieces soften more quickly which reduces cooking time, and because my picky son doesn't pick out the smaller vegetables!

Ingredients

    1 lb. lean ground beef
    1 small onion, chopped or minced
    1 clove garlic, minced
    black pepper, to taste
    2-3 stalks celery, chopped or minced
    2-3 carrots, chopped or minced
    1/4 c. soy sauce
    2 Tbsp. corn starch, mixed with water
    1-2 c. water
    1 c. brown rice, cooked according to pkg. directions

Directions

Brown ground beef, onion, and garlic in large skillet, drain.

Add celery, carrots, soy sauce, black pepper and water. Simmer until vegetables are tender.

For more gravy, add additional water.

Thicken with corn starch. Serve over rice.
