Ingredients

    2.0 cup (1" pieces) Cauliflower, cooked
    3 tbsp Parmesan Cheese, grated
    2 large Egg, fresh, whole, raw
    1 tsp Garlic powder
    1 tsp Italian seasoning
    0.25 tsp Kosher Salt (by 65PLUS1)
    20 slice (1-3/8" dia x 1/8" thick Pepperoni
    0.50 cup Classico Traditional Pizza Sauce
    2 oz Soy Cheese

Directions

Preheat the oven to 400. If your cauliflower is not already riced, do so. Mix the riced cauliflower, parmesan, half of the mozarella, slightly beaten eggs, garlic powder and salt in a bowl. Line your pizza pan with parchment paper, then spread the mixture in a circle on the paper, patting with a fork so it's uniform in thickness. Bake for 20 minutes. If it still looks damp, go a few more minutes. Spread your pizza sauce, place your pepperoni and sprinkle the rest of the mozarella. Bake for 10 more minutes. Let set for 2 minutes, slice and serve.
