Ingredients

    28 oz Hormel Extra Lean Center Cut Loin Filet, Original

    2 Tbl Olive Oil
    3 tsp minced garlic
    2 Tbl rosemary, fresh (chopped)

Directions

Mix all ingredients in bowl. Smear on tenderloin and cover with Saran Wrap.

Put in refrigerator for 1 hour up to overnight.

Preheat oven to 400. Cook in shallow baking dish for 40 minutes or internal temp. is 160.

Remove from heat. Wait for 10 minutes and serve.

    Very Good
    I am trying this tonight. I added fresh sage, cracked pepper and 1/2 cup white wine in the marinade. Getting ready to pop it in the oven now. *********Now after dinner. The pork tenderloin was awesome. I served it with Quinoa with peppers and onions. Great meal. - 9/21/09

    Very Good
    This is even better with 2-3 TBS lime juice poured the loin before it is roasted. I add mini carrots, red potatoes (with skin) and a sliced up apple and bake it all together. Delicious flavors all co-mingled. Delicious!! - 8/22/09
