Ingredients

Sandwich and Stuffing:
2 whole wheat pitas
4 romaine lettuce leafs
8 thin slices onion
8 thin slices tomato
8 thin slices of cucumber
8 large pitted black olives, sliced
Super Easy Taziki:
1/2 lemon
1/4 cups plain nonfat yogurt
1/3 of a medium cucumber, peeled and grated
salt and pepper to taste
Hummus:
1/2 lemon
1 cup chickpeas, washed and drained
2 oz tahini
2 cloves garlic
about 10 sprigs of parsley
salt and pepper to taste
Directions
Slice pitas in half and toast all four pieces in oven or toaster.
While they are toasting, squeeze half a lemon into a small bowl. Mix in all ingredients of taziki recipe and set aside.
In a blender, squeeze remainder of lemon and mix in all ingredients for hummus recipe. Blend until a bit thinner than peanut butter.
Spread hummus inside pita pockets, add all veggies and top with taziki and Serve.
Optional: Try with feta or falafel.
