I have recently become completely obsessed with energy balls. They are great pre and post workout snacks. These are vegan, gluten free, refined sugar free and completely delicious! These are vegan, gluten free, refined sugar free and completely delicious!Number of Servings: 16
Ingredients

122 gram(s) Bob's Red Mill Old Fashioned Rolled Oats (Gluten Free)--1/2 C dry = 48g
90 grams Cashew Butter
60 grams Maple Syrup
2 grams Salt
0.25 cup Cranberries, dried, sweetened (craisins)
30 grams Pistachio Nuts
Directions
Toast oats in 375 degee oven for 8-9 minutes
Process 96 gms (1 cup) of toasted oats, cashew butter, maple syrup and salt in food processor until homogenous dough is formed. Add in remaining oats, cranberries and pistachios. Add in 1/2 Tbsp of water for desired consistency (when dough squeezed in fist should form tight ball). Roll into balls. Can be stored in freezer for 1-2 months or refrigerator for 2-3 weeks.
