0.5 cup Honey
0.25 cup Maple Syrup
0.33 cup Canola Oil
0.33 cup Applesauce, unsweetened
0.3 cup Buttermilk, lowfat
3 large Egg, fresh, whole, raw
2 cup, grated Carrots, raw
1 large (3-1/4" dia) (approx 2 p Apples, fresh with skin
2 oz (20 halves) Pecans
8 tbsp Coconut Flakes, Organic, Unsweetened
2 tsp Cinnamon, ground
0.25 tsp Salt
0.135 tsp Cloves, ground
0.25 tsp Nutmeg, ground
0.5 tsp Ginger, ground
2 tsp Vanilla Extract
Directions
Preheat oven to 350. Prepare 18 muffin cups. Mix dry ingredients and wet ingredients in separate bowls. Grate carrots and apple. Add wet ingredients, grated carrots and apple to dry ingredients. Mix to combine. Put in 18 muffin tins and bake 20-25 minutes or until knife inserted comes out clean.
