Ingredients

    250 gram(s) Bittermelon (karela - 1 cup = 124g) (by PAULPANNU)
    100 grams Onions, raw
    10 gram(s) Peppers, hot chile, green, raw, 1 pepper (by 4565S568SDS)
    1 serving Curry Leaves (4/6 Leaves) (by KTR_JHR)
    200 grams Coconut, raw , shredded
    2 tbsp Coconut Oil
    pinch of turmeric
    salt to taste
    1/4 tsp mustard seeds

this can be eaten for lunch or dinner


Directions

- deseed the bitter melon. place the bittermelon in a food processor. sprinkle some salt over it. fine chop it
- fine chop the onion, slice the green chillies in half
- squeeze out the water from the bitter melon. by doing so, it cuts down the bitterness.
- in a big mixing bowl, mix together the bitter melon, onion, chillies, curry leaves, shredded coconut, curry leaves, salt and turmeric. be sure to use your hands and mix it with good amount of pressure. it helps to fuse the flavours.
- heat up the oil in a pan. add the mustard seeds and wait for it to splutter
- add the bitter melon mix to the pan, stir, cover and let it cook on a low-medium heat. at this point we're creating a steam effect. occasionally stir and check for salt. the idea is not to have much moisture. it should be airy and flaky. if there is moisture, leave it open and be sure to spread the bitter melon evenly in the pan.
- serve as a side dish to any main indian dish and rice
