Ingredients

4 big fresh tomatoes, diced
3 cloves of garlic, crushed
1/2 onion, finely diced
A bunch (about half a handful) of fresh coriander leaves
1 tablespoon of Extra Virgin Olive Oil
The ingredients can, of course, be altered to suit different tastes. I personally adore garlic - so it's 3 cloves for me... but others may prefer a mere hint of the stuff. Likewise, fresh coriander is pungent and peppery - and can be overwhelming for those unaccustomed to it's flavour. Try adding it last to test the amount that suits best.
Directions
Add the tomatoes, onion and garlic in a bowl.
Strip the coriander leaves from their stems, chop them up and add to bowl.
Drizzle the olive oil on top and stir it through.
Serve slightly chilled, after a little time in fridge to allow flavours to blend.
Makes enough for 4 people.
Plus, this recipe is also great heated and served on crusty bread or pasta.
Please note that after a day in the fridge the juices from the tomatoes make it waterier and less 'chunky', but the flavours are more profound.
