I modified this Kraft foods recipe for Angel Lush Cake just a bit for fewer calories/fat per serving.

This cake is PERFECT for summer. Light and not TOO sweet, and served cold so it really beats the heat.

Ingredients

    1 Sugar-Free, Fat-free Angel Food Cake
    1 cup Cool-Whip Free (Sugar/Fat Free)
    1 20oz. can crushed pineapple in juice, not drained
    1 pkg. Jello sugar-free, fat-free vanilla pudding
    8 large strawberries (for decorating the top)

Directions

Slice cake, horizontally, into thirds. In a bowl, combine pudding mix, pineapple with juice, and cool-whip. Spread between the layers of cake including the top. Garnish top with strawberries.

Makes 8 servings.

    Ditto Moontoes1 comments. I found it difficult to cut the angel food cake evenly horizontally so my cake looks a little cobbed together; but it still tastes very good. Next time I may chunk the cake and make parfaits. That would be easier to serve to dinner guests. - 4/12/11
