Introduction

Number of Servings: 10

Ingredients

    3 cups cooked pearled barley
    4 cups kale leaves (large stems stripped out), ripped or chopped into bite-size pieces
    1/3 cup packed raisins
    1/3 cup pine nuts
    4 Tbsp olive oil
    2 Tbsp balsamic vinegar
    1/3 tsp salt, to taste

Tips

Note: If using tender baby kale, there's no need to saute first. Simply tossing the leaves with the warm barley and pine nuts will wilt them.


Directions

Toast pine nuts in a dry skillet. Combine nuts, raisins, and barley in a large bowl and dress with balsamic vinegar and 2 Tbsp olive oil.

Saute kale in remaining 2 Tbsp olive oil. Toss with other ingredients and add salt to taste. Best served warm or room temperature.

Serving Size: 10 servings of about 1/2 cup each.
