Ingredients

BATTER:
1-1/2 teaspoons Ener-G Egg Replacer
2 tablespoons water
1/4 cup Canola oil
1/4 cup soy milk (I prefer Soy Dream)
1/2 cup mashed ripe banana (1 banana)
1/2 cup brown sugar, packed
1 cup whole wheat pastry flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
TOPPING:
1/4 cup brown sugar (packed)
1/4 cup chopped walnuts
2 tablespoons whole wheat pastry flour
1/4 teaspoon cinnamon
1 tablespoon margarine, softened
Directions
1. Spray a Pyrex (glass) 8" round cake pan with nonstick spray. Set aside.
2. In a medium bowl whisk together the egg replacer and water. Then mix in the oil, soy milk. mashed banana. and brown sugar.
3. Add the cup of whole wheat pastry flour, baking powder, salt, and baking soda, and beat just until mixed. Pour into prepared baking dish.
4. In a smaller bowl, put the brown sugar, walnuts, the 2 tablespoons of whole wheat pastry flour, cinnamon and margarine. Crumble together with your fingertips until well mixed. Sprinkle over the batter in the baking dish.
5. Place in microwave and cook on MEDIUM or 60% power for 8 - 10 minutes or until toothpick inserted near center comes out clean. Let stand for at least 10 minutes before serving.
