Introduction

I often eat cottage cheese as a high-protein snack before bed. I got a little fancier with it this time around, and made this decadent treat with no guilt! I often eat cottage cheese as a high-protein snack before bed. I got a little fancier with it this time around, and made this decadent treat with no guilt!

Ingredients

    100 g fat-free Quark or Cottage Cheese
    2 Tbs vanilla-flavored protein powder
    1 tsp lime juice
    1 egg white
    splenda/stevia to taste

Directions

If using cottage cheese, you'll want to make this in your blender for a smoother consistency.

Preheat oven to 300° F.

Mix your quark or cottage cheese with the protein powder, and lime juice. Taste for sweetness, and add a bit more sweetener if desired. Add egg white and stir thoroughly. Pour into a small baking form (I used the bottom part of my citrus juicer!).

When the oven is heated, place a small pan with about an inch of water in the oven. Set your "cheesecake" pan in this water bath. It will help give a better finished texture.

Bake for 20 minutes, and cool for about the same length of time.

    LOVE this! I omit the splenda...I try to limit artificial sweeteners. But I add a sprinkling of sfff lime jello mix to it and its perfect!

    What a wonderful treat to kill a sweet tooth!! I made the recipe with cottage cheese and Truvia instead of Splenda. I added 2 single serv packets. My kids and I loved it! I'll be making this again. - 1/23/10
