Ingredients

    2 tbsp almond butter
    1 tbsp ghee
    1 extra large egg
    3 tbsp coconut flour
    1 tsp cocoa powder
    1/2 tsp stevia in the raw for baking
    1/4 tsp arrowroot starch
    1/4 tsp baking powder
    1/4 tsp vanilla extract

Directions

Mix almond butter, ghee and vanilla extract in a mug. Melt on low heat for about 10 minutes in the mug in the oven. Stir in the mug, then add all the dry ingredients. Let cool slightly, then stir in the egg yolk. Whip the egg white to a froth, then fold it in last. Do not overmix. Bake in the oven at 350 degrees for 9 minutes. (If using a convection oven, bake at 325 degrees. If using a microwave, microwave on high for 1-1/2 minutes.)
