Introduction
A long-time family favorite. I guess you could classify this as a Jello Salad, but we've always just called it "Pink Stuff". There are tons of variations on this as well (Included as a note). Ingredients

1 (0.3-oz package) Jello Sugar Free Strawberry Gelatin
1 (8-oz container) Cool Whip Free
8-oz fat-free cottage cheese
1 (8-oz can) crushed pineapple
1/2 cup chopped walnuts
Directions
Fold Jello packet into Cool Whip. Drain the pineapple VERY WELL and fold into Cool Whip mixture along with the cottage cheese and nuts. Cover and store in refrigerator until cold and set.
Serves approximately 8. 1 serving = 1/3 cup
Variations (not included in nutritional information):
Orange:
Substitute Sugar Free Lemon, Orange, or Lime flavored Jello and add drained mandarin orange slices instead of pineapple.
Mama's Favorite:
Substitute Sugar Free Cherry Jello flavored and add one small container of fresh raspberries and two small containers of fresh blackberries in place of the pineapple.
