Ingredients

    1 cup, chopped Swiss Chard
    3 serving Egg white, large
    2 gram(s) Olive Oil Cooking Spray - 1 sec. spray
    1.25 oz Olympia Provisions Summer Sausage

Tips

Can be made with whole eggs, but will be more calorific and higher in cholesterol.


Directions

Wash the swiss chard leaf and drain off some of the excess water. Chop the chard into pieces. Spray a non stick skillet or pan with 2 seconds of the cooking oil spray. Add the chard, and saute on low heat until wilted. Weigh, slice and dice the summer sausage and add to the chard in the skillet, to heat. Separate the egg whites from the yolks into a bowl (discard the yolks or feed them to your pet). Beat the egg whites until bubbly about 100 strokes. Add the eggs to the chard and sausage mix in the skillet and cook well, folding and turning the scramble over until cooked thru and browned a little. Serve hot, bon appetīt.
