Ingredients

    2 cans cream corn
    1 can white or yellow corn
    2 cans vegetable broth
    2 tablespoons tamari (or soy sauce)
    2 tablespoons corn starch
    1/4 cup water
    2 large eggs, beaten
    2 teaspoons ginger (optional)
    salt and pepper (to taste)
    1 tablespoon sesame oil (optional)

Directions

In a large sauce pan, combine broth, creamed corn and drained whole kernel corn; bring to a low boil.
Combine corn starch and water and slowly add to soup, stirring constantly.
Add tamari and optional seasonings, if desired.
Beat eggs and pour in a steady stream into soup while stirring.
Pour into bowls and enjoy! Even better topped with fresh green onion.
