Ingredients

3 lb boneless chicken breast - raw
8 oz Philadelphia Cream Cheese
.5 tsp Garlic powder
1 4.5 oz can Chopped green chiles (Old El Paso)
8 oz Pepper jack cheese block, shredded or sliced
.25 tsp Cumin seed
.25 tsp Salt
.25 tsp Pepper, black
Tips
Use a less peppery cheese if you don't like spice. Also try cutting up the chicken to an "easier" way to eat this without a knife. Amount of time in the oven will vary depending on thickness/shape of chicken pieces.
Directions
1. Heat the oven to 375F.
2. In a medium bowl, mix the cream cheese, garlic powder, cumin, salt and pepper until combined. Then stir in the green chilis and stir until evenly mixed.
3. Lay the chicken breasts flat in a baking dish. Cover the chicken breasts with the green chili mixture. Then top with the cheese.
4. Bake on the middle rack for 35-45 minutes or until chicken is cooked through and the juices run clear.
5. Serve hot over sautéed spinach or cauliflower rice. Enjoy!
