Introduction

Lower in fat and calories than traditional muffins. Lower in fat and calories than traditional muffins.
Number of Servings: 24

Ingredients

    3 Cups Flour
    1.5 Cups Sugar
    4 Tsp. Baking Powder
    2/3 cup Spring Water
    2/3 Cup 1% Lactose Free milk


    1/4 cup finely chopped walnuts
    2 cups cranberries
    Juice and zest of one orange
    1 Tsp vanilla Extract

Directions

In one dish mix together chopped cranberries, walnuts, orange zest, juice, and vanilla. Let sit while preparing other ingredients

In mix all dry ingredients in mixing bowl.

In a seperate cup mix milk, water and eggs.

With mixer on slow, add the wet ingredients in with the dry. Mix only until everything is mixed in. Try not to over mix.

Fold in cranberry mixture.

Fill muffin tins 3/4 full and bake for 20 minutes at 350 degrees.

Yields 24 regular muffins or 48 mini muffins.
