Great lite version of Taco Bell's Mexican Pizza Great lite version of Taco Bell's Mexican Pizza
Number of Servings: 4

Ingredients

    280 gram Mission Flour Tortillas Small Fajita Super Soft (1 tortillia) (8 Tortillias)
    2 cup Refried beans, ROSARITA, refried beans, traditional
    16 oz Organic Valley Ground Chicken, Frozen
    1 serving Taco Bell - Taco Seasoning Mix (1 packet) (by STEVI77)
    1 cup Kraft Natural Cheese Mexican Style Cheddar Jack Finely Shredded
    1 cup La Victoria Enchilada Sauce
    1 cup, chopped or sliced Red Ripe Tomatoes
    1/4 cup water

Directions


* Preheat your oven to 400 degrees F
* Or
* Preheat your air fryer to 370 degrees F
* Over medium high heat, cook the ground chicken
* Once browned add in the homemade taco seasoning and water and bring to a boil
* Reduce to a simmer and allow to thicken
* Remove from heat and set aside
* For the tortilla shells
* cook in the oven for 5 minutes Or
* Air fryer for 4 minutes until crispy
* To assemble each (you will have 4 pizzas)
* Spread refried beans on the 4 crispy cooked shells
* Top the bottom layer with 1/4th of the taco meat
* Then top with another crispy tortilla
* Top that tortilla with 1/4th enchilada sauce and 1/4th cheese
* Lastly, sprinkle on 1/4th of the diced tomatoes
* Cook in the air fryer at 370 for 8 to 10 minutes until cheese melted
* Or
* Cook in a traditional oven at 400 for 10 to 12 minutes
