Ingredients

6 packed cups fresh Basil
1/4 cup Extra Virgin Olive Oil
1 cup Pine Nuts
1-1/2 cups Parmesan Cheese, shredded
9 cloves garlic, peeled
salt and pepper to taste
Tips
Freezes very well. I measure it into greased cupcake tins and freeze until solid, then transfer all "pesto pucks" into a ziplock bag. Pesto will stay bright green and fresh for months.
Directions
Peel garlic and process until minced. Add pine nuts, process until smooth. Add oil and cheese, process until smooth. Cram all the basil leaves into the blender or food processor (I like using the food processor better than the blender.) Process until smooth. Salt and pepper to taste. Serve on hot, whole grain pasta, 1-2 Tablespoons.
Serving Size: Makes approx 40 - 1 Tbs servings. A little goes a long way.
